20-21 August: A taste of the Middle Ages

On the weekend of 20-21 August, there will be cooking, braising, roasting, and baking in Sundkøbing.

There are recipes preserved from the Middle Ages. These recipes testify to the use of many spices, delicious ingredients, and long processes. Minced meat was made by scraping pieces of meat from large cuts, then minced finely by hand - this is a lengthy process, and dishes with minced meat were therefore very fine.

Spices cost huge sums of money and had to be imported from far away. Only the richest could afford cinnamon, saffron, and cardamom - but oh that smells lovely.

There will be an opportunity to find out what all those expensive imported spices were used for, and what was eaten in the finer household and by the common artisan.

Sundkøbing will smell of delicious dishes. Come along and dispel some myths about medieval food!
